Over the years the cooperative has grown significantly and is\u003cbr\u003enow composed of over 1200 vine growers. They are now one of the most professional,\u003cbr\u003eforward-thinking companies in Southern Italy, with a reputation for producing great wines.\u003cbr\u003eTheir production philosophy is simple but uncompromising; “passion” and “competence”\u003cbr\u003eare the bywords at the heart of their everyday activity.\u003cbr\u003eV\u003cbr\u003eineyard\u003cbr\u003eThe vineyard is located at approximately 100 metres above sea level and benefits from\u003cbr\u003egreat diurnal temperature variations. The warmer temperatures during the day and cooler\u003cbr\u003enights encourage the grapes to have a long maturation period, with the heat of the day\u003cbr\u003epromoting sugar accumulation, while the cooler nights preserve the acidity levels. The\u003cbr\u003evines are planted at a density of 4,500 vines per hectare and are trained according to the\u003cbr\u003eGuyot method. The soils are quite thin, soft and shallow, but have a good texture.\u003cbr\u003eW\u003cbr\u003einemaking\u003cbr\u003eThe grapes were gently destemmed and then cool macerated for several hours to allow\u003cbr\u003ethe flavour to develop. This was followed by a gentle pressing and a cold settling to\u003cbr\u003eencourage a natural sedimentation. Fermentation took place in French oak barrels. The\u003cbr\u003ewine was matured on its fine lees in barriques for a period of four months, with weekly lees\u003cbr\u003estirring which imparted texture and complexity to the wine.\u003cbr\u003eTasting Note\u003cbr\u003eA distinctive blend delivering aromas of sun-ripened peach and mellow floral aromatics,\u003cbr\u003ewhich are interwoven with delicate hints of vanilla.
