The grapes were destemmed and \u003cbr\u003egently pressed over six hours, with the juice then settled in a stainless steel tank. After 24 hours of \u003cbr\u003edecanting, the must and selected lees were transferred to 300 and 500 litre French oak barrels for \u003cbr\u003efermentation. The Semillón was aged for thirteen months in both new and used French oak, and then \u003cbr\u003ebottled and rested for six months before release.\u003cbr\u003e \u003cbr\u003eTASTING NOTE\u003cbr\u003eA wide range of aromas, such as honey, peach, green herbs, dried fruit and gunpowder. It is a \u003cbr\u003estructured Semilón, medium bodied with mineral and a saline touch on the palate.
